شناسایی، اولویت بندی و شبیه‌سازی عوامل مؤثر بر عملکرد مالی در زنجیره‌های تأمین (مطالعه موردی: رستوران های شهر اصفهان)

چکیده
با گسترش زنجیره‌های تأمین در صنایع مختلف، اهمیت و پیچیدگی عملکرد مالی زنجیره‌های تأمین و شناخت معیارها و عوامل مؤثر بر آن در شرکت‌ها و اصناف مختلف رو به افزایش گذاشته است. هدف پژوهش حاضر شناسایی، اولویت‌بندی و شبیه‌سازی عوامل مؤثر بر عملکرد مالی در زنجیره‌های تأمین رستوران‌های شهر اصفهان بوده است. روش پژوهش به لحاظ هدف، کاربردی و به لحاظ ماهیت، توصیفی-تحلیلی بوده و روش گردآوری داده‌ها پیمایشی با پرسشنامه‌های محقق ساخته بوده است. بدین منظور از بین جامعه مدیران زنجیره تأمین رستوران‌های شهر اصفهان در سال 1404 به حجم 20 نفر، تعداد 12 نفر به روش هدفمند انتخاب شدند. سؤال‌های پژوهش به روش دلفی فازی، مدل‌سازی ساختاری تفسیری فازی، بهترین بدترین فازی و نقشه شناخت فازی تجزیه‌وتحلیل شدند. نتایج مربوط به روش دلفی فازی نشان داد که 11 معیار عملکرد مالی زنجیره تأمین رستوران‌های شهر اصفهان و 8 عامل مؤثر بر آن‌ها مورد تأیید قرار گرفته‌اند. اولویت‌بندی معیارهای عملکرد مالی به روش مدل‌سازی ساختاری تفسیری فازی نشان داد که بازده دارایی‌ها، سهم بازار و گردش موجودی در بالاترین سطح بوده‌اند. همچنین اولویت‌بندی عوامل مؤثر بر معیارهای عملکرد مالی زنجیره تأمین رستوران‌های شهر اصفهان نشان داد که مدیریت ریسک در زنجیره تأمین در بالاترین سطح قرار داشته است. محاسبه وزن عوامل مؤثر بر معیارهای عملکرد مالی زنجیره تأمین رستوران‌های شهر اصفهان به روش بهترین بدترین فازی و نقشه نگاشت فازی این عوامل نشان داد که بازده دارایی‌ها با مرکزیت 7، سهم بازار با مرکزیت 6/94 و گردش موجودی با مرکزیت 6/88 دارای بالاترین میزان تأثیرگذاری بوده‌اند.

Identification, Prioritization, and Simulation of Factors Influencing Financial Performance in Supply Chains: A Case Study of Restaurants in the City of Isfahan

The growing complexity and rising importance of supply chain financial performance in various industries have elevated the need for identifying and understanding the key criteria and influencing factors within companies and specific sectors. The present research aims to identify, prioritize, and simulate the influential factors on financial performance in the supply chains of restaurants in the city of Isfahan. The research methodology is applied in terms of objective and descriptive-analytical in terms of nature, and the data collection method is a survey using self-constructed questionnaires. Therefore, from the population of supply chain managers in Isfahan’s restaurants in 1404 (approximately 20 individuals), 12 were selected by purposive sampling. The research questions were analyzed using fuzzy Delphi, fuzzy interpretive structural modeling, fuzzy best-worst, and fuzzy cognitive maps. The results from the fuzzy Delphi method indicated that 11 criteria for financial performance of supply chains in Isfahan’s restaurants and 8 influencing factors on them were confirmed. Prioritization of the financial performance criteria using fuzzy interpretive structural modeling showed that return on assets, market share, and inventory turnover were at the highest level. Additionally, prioritization of the factors influencing the financial performance criteria of supply chains in Isfahan’s restaurants using fuzzy best-worst demonstrated that risk management in the supply chain was at the highest level. Calculation of the weights of the factors influencing the financial performance criteria of supply chains in Isfahan’s restaurants using fuzzy best-worst and fuzzy cognitive mapping revealed that return on assets with a center of 7, market share with a center of 6.94, and inventory turnover with a center of 6.88 exhibited the highest impact.
